Beer, Steak, and Bok Choy

I had an urger for beer, and good food for my Sunday night feast.
I started it all off with a little visit to Royal City Brewing. A very new micro brewery in Guelph as of June this year. I just happened to stumble upon this place on my journey to Kamil Juices which is in the same plaza. This place had my attention, although at first I wasn't sure if this was a brew it yourself type of deal or an actual full on brewery. You can check them out at www.royalcitybrew.ca sadly they don't have much info on their site, which unfortunately still left me somewhat in the dark.
I made the journey and found out they have a great little brewery. On tap is a ton of selections that would make any micro brew advocates mouth water. They had me as soon as I walked in the door. A big wall of taps that had an amazing picture of downtown Guelph that was surely over  40 years old. From an IPA to a good stout they had it all. I was intrigued by the selection that was absolutely fantastic. I had many samples and had a hard time deciding what was my favorite. You pay $5 for the jug, then you just return to have it filled with your favorite brew, how awesome is that.
The seasonal brew was the Harvest Ale. This was brewed with sweet potato and squash. Although it doesn't sound amazing, it had a delicious fresh taste with a bit of spice. With all the rage over pumpkin this time of year, they left the norm and came up with something quite unique and delicious. 
Now I was left to pair it with something fantastic food wise. I'm no professional however I wanted steak and I wanted some kind of vegetable. My choice was T-Bone Steak and Bok Choy. Quite random I know. 
So for the steak I started with a great fresh cut of steak.
I seasoned it with "the keg" steak spice, which I haven't found a better mixture to this day. The combination of salt and spice is just amazing. I coat each side and rub it in as best I can, don't want to lose all the seasoning on the pan. Now to produce the most succulent steak ever. To accomplish this it isn't on the BBQ (But the only good steak is BBQ you say...), we are talking searing the outside to perfection and placing it in the oven.
Heat up a pan very hot with your oil of choice. Olive oil, vegetable oil, whatever you have. When the oil is very hot and starts to smoke just a little bit, place the steak in, just be careful of the hot oil. Cook for 3 minutes and flip, the other side you will let cook for around 2 minutes. Once that is complete you place the steak on a pan that has a coating of butter. Don't be afraid to have a chunk of butter that you place the steak on.
You will then place the steak into the over at 450 for approx 8 minutes. Depending on the thickness you may want to have less time. I guarantee you that even if you overcook it to your liking, it will still be juicier and as succulent as if you made it on the BBQ. It is VERY important that you let the steak sit for approx 8 minutes after you take it out of the oven. If you don't the first cut you make on that amazing looking steak with send all the juices out and make the steak not quite enjoyable.
Now for the Bok Choy
Clean and cut in halves, or quarters depending on the size. Drizzle with olive oil. Place in the oven on broil on the highest rack. Let bake for approx 4 minutes then turn and cook for another 4 minutes. When the Bok Choy is at the perfect tenderness for your liking, remove from the oven and splash fresh lemon juice and put a dash of salt and pepper on them. Delicious! You can also cook and season broccoli in the same manner, just as amazing. (Thanks goes out to my friend Katrina who showed me this)
The end result is an amazing steak that will have you wondering why you ever used a BBQ in the first place....I live In a condo so I don't have much choice, but seriously.....the steak is absolutely incredible.
